Rache & I went to see Hannah Montana: The Movie tonight and it was AWESOME!!!!! Don't pay even a hint of attention to its rating on imdb. I loved it!!

Tasty Mexican Dinner

Tonight I made pico & enchiladas and they were pretty sweet:

Zesty Chicken Enchiladas
1 tbsp canola oil
1 lb tomatillos, chopped
1 white onion, chopped
1 poblano pepper, chopped
2 cloves garlic, chopped
3/4 tsp ground cumin
salt & pepper
1 cup heavy cream
2 cans chicken
1 14.5 oz can diced tomatoes, drained
1 1/4 cups grated monterey jack
8 6-inch corn tortillas

*Heat oven to 400. Heat the oil in a large skillet over medium-high heat. Add the tomatillos, onion, poblano, garlic, cumin, and 1/2 tsp salt. Cook, stirring occasionally, until the veggies are tender, 10 to 12 minutes. Transfer to a food processor, add the cream, and puree.

*In a large bowl, combine the chicken, tomatoes, 1 cup cheese, 1/2 cup of the tomatillo sauce, and 1/2 tsp salt & pepper

*Warm tortillas. Spread 1 cup of the remaining sauce in a 9-by-13-inch baking dish. Roll the chicken mixture in the tortillas and place them in the dish, seam-side down.

*Top with remaining sauce and cheese. Bake until beginning to brown, 10 to 15 minutes. Serve with pico.

Pico de Gallo
1 lb tomatoes, chopped
1 jalapeno, chopped
1/2 white onion, chopped
1/4 cup cilantro, chopped
1 tbsp lime juice
salt & pepper

*Mix all ingredients and enjoy

I got it out of the May Real Simple, and we thought it was excellent.

Easter

This year was our first Easter w/o family, so it was kind of sad, but we did have a great time getting together with some friends at Drew & Rachel's. We grilled some chicken, had some mac-n-cheese, some muffin tops, and chocolate cake.

And what's a party with out games of course?? We went old school style with separate boy and girl games. The girls played the train game (obviously) and the boys played some catan.
So we finished the first round of games around 5:45ish, but the boys decided to go for round 2....and 3, so us girls enjoyed flipping through creative memories magazines & Rachel's scrapbooks while watching Miss Congeniality. Finally around 9ish we left the Erwins spending a mere 8 hours over there. Hopefully Drew got some studying in...boy I'm glad I'm not in school.

Poor Altima

Here's what Luke did all day today...
And I didn't just stand there taking pictures...I worked on our taxes. Luke is definitely going to have to check them b/c currently we owe $16,000 and that just doesn't seem right :)

We did finish the day off good with some gumbo and train game playing, except we played with 7 people which can be pretty frustrating.

C-ville!

Last weekend Luke and I went to Charlottesville to hang out with James & Sherrie. Saturday morning Sherrie was running a 10-miler, so we were all going to go watch. Luke's been training for a 5k and decided to run the race as well. I thought this action-shot of Sherrie and her running buddy Katherine was pretty good :)
A couple of people from James & Sherrie's church ran with them. And yes, Luke is sporting the slanket.
After the race, we went home to relax and then headed to UVA's campus to play Frisbee. We are all about the action shots these days.
It was a very nice day out and it seems like everyone else thought the same because the campus was packed with golfers hitting tennis balls...very strange. There were a couple of tools wearing plaid shorts and popped-collar light-pink polos.
And of course we had to finish the day off playing games: Ticket to Ride and Catan. Catan has always been the Ramsey-Hargrove game and because we're all pros we got to introduce the newest version we got for Christmas, Traders & Barbarians.
We're so glad the Ramseys live so close, I was super sad when they moved from Austin!

The Train Game

So like I said before, Luke and I are part of a train game society with our friends Drew & Rachel and Kyle & Sara. Since we've introduced Ticket to Ride to them, both couples now own it. And Luke's brother Mark has bought one too. I think Days of Wonder and Alan Moon should give us some sort of advertising fee.

Operation: Colonial Chaos!

Friday, March 27, Luke and I helped with a Youth Scavenger Hunt at our church. It was a pretty intense ordeal and Kyle and the other planners did a great job putting it all together. Basically, the kids were divided up into 4 teams and they were trying to solve a case which ultimately was a guy building a brainwashing machine to take over the minds of tourists in Colonial Williamsburg and abroad. The teams started out with clues that lead them to a henchman who gave them another clue that they called into headquarters to receive their next clue. It seemed to be a lot of fun....I mean Where in the World is Carmen Sandiego was always my favorite computer game :)

So Luke's job was the Mercenary...he had to get the teams to cross the "electric fence" to retrieve a prized possession (an old Lexus wheel) in order to get the information he had for them. Good thing we had some Caution tape!
As you can see, Luke looked pretty ridiculous, underneath the leisure suit he had on an Obama t-shirt...which kind of confused some of the kids, haha. And that night it was raining and freezing outside. Luke was such a trooper!

My job was at the very end where I was a Technician explaining how the task of building a machine to destroy the brainwashing machine. All in all it was a fun night and I wish my youth group growing up was that cool.
